It is officially Labor Day weekend, my peeps! I don’t know about you all, but I am planning on spending this weekend hanging out at some of my very favorite rooftop bars, watching fireworks, lounging by the pool and grilling out with the hubs. But, really… What’s a relaxing pool-lounge day or evening grill-out without a fun and delicious cocktail in hand?! I mean, it’s necessary…. So, here are a few of my very FAVE (ultra-girly) cocktail recipes to beat the heat this Labor Day weekend.

RECIPE #1: Vodka Water Popsicles with Fruit

INGREDIENTS:

  • 8-10 oz. Tito’s Vodka
  • 24 oz. San Pellegrino Sparkling Water
  • 4 oz. Fresh Squeezed Lemon Juice
  • 2 oz. Fresh Squeezed Lime Juice
  • 2 c. Chopped Fresh Fruit (of your Choosing)
  • Popsicle Molds

Start by choosing the type of fruit you want to fill each popsicle mold with. Dice the fruit and fill each popsicle mold to the top with about 1/3 c. of fruit per mold. (TIP: I’d recommend mashing the fruit up a bit inside the popsicle molds because it will help release more of the fruit-y flavors.) Once each mold has been filled with fruit, combine the vodka, sparkling water, lemon juice and lime juice into a pitcher and stir to mix. Fill each popsicle mold to the top with this vodka water mixture. Lastly, place the popsicle molds in the freezer and let sit for 4-6 hours. Enjoy each popsicle by itself or add to a refreshing glass of champagne or white wine!

RECIPE #2: Sparkling Rose with Lemon

INGREDIENTS:

  • 6 oz. ‘Yes Way Rose’ Wine (or any Rose wine)
  • 6 oz. San Pellegrino Sparkling Water
  • 1 Lemon

This recipe is SUPER simple. Just combine equal parts rose and sparkling water. Squeeze in a little bit of lemon juice. Garnish with a lemon slice or two and that’s literally it! It’s super refreshing and yummy and makes a glass of rose on a warm day taste THAT much better. It also pairs perfectly with a delicious summer salad.

RECIPE #3: Prosecco Slushees

INGREDIENTS:

  • 1/2 Bottle Prosecco
  • 1 Bottle Strawberry Watermelon Flavored Sparkling Ice
  • Splash of Tito’s Vodka (OPTIONAL)
  • Juice from 2 Lemons
  • Juice from 4 Limes
  • LOTS of Ice
  • Blender

Combine the prosecco (1/2 the bottle), Strawberry Watermelon flavored Sparkling Ice (entire bottle), the juice from 2 lemons and 4 limes (this is what gives the drink it’s sour ‘punch’) and 5 handfuls of ice into a blender. Blend it and ta-da! You now officially have the world’s best drink on your hands. My husband likes to top his off with a little Tito’s vodka, (I do not), but it’s entirely up to you how you like it!

This slushee has literally become my new summer cocktail of choice. It’s insanely delicious. If you like the Watermelon Sour Patch Kids candy then you will LOVE this drink. I swear to God it tastes IDENTICAL to those. SO YUMMY!

RECIPE #4: Prosecco with Raspberry Sorbet

INGREDIENTS:

  • Prosecco
  • Raspberry Sorbet (or any sorbet flavor of your choosing)

This recipe is probs the easiest of the bunch. With just two ingredients, it literally takes 2 seconds to throw together. All you have to do is bring home a bottle of Prosecco and your very favorite flavor of sorbet to whip it up. Scoop a very generous helping of the sorbet into the bottom of a wine or champagne glass and top with champagne! That’s seriously all it takes and it gives your standard glass of champagne a little extra pizzazz! Would be perfect for a weekend brunch get together!
